I'm waiting for all those pics of Yukari hanging out with Sumireko.
I'm still extremely surprised/disappointed that Yukari wasn't in ULiL, she's not even referenced. People were tearing a damn hole in the barrier and she didn't give a fuck about it.

I was half expecting her to show up annoyed for all the border travelling people were doing. Wouldn't have been too far of a stretch to include her under the 'Bermuda Triangle' myth, considering she also keeps a train in her gaps, it wouldn't be a stretch to stick in boats, planes and other things too.

Yeah, i suppose they really didn't want to re-use characters from previous fighting games. Besides, her urban legend would have been the Gap Woman, already used by Reimu. Ran, on the other hand, could have been used (Kokkuri-san/Ouija table urban legends would be perfect for her), as i'm still waiting to see her actually doing her job in substituting Yukari.
On a side note, ULiL made me like Mamizou a lot. That ominous smile of her is great.

Quite obviously she slept through the whole thing.

It probably wasn't about reusing characters as much as the programming, drawing, and time constraints. Also the border hopping only happened at the Hakurei shrine which is the border of Gensoukyo, where it is the thinnest. Things entering and leaving Gensoukyo happen in canon as described by Akyuu in PMiSS.
I think I forgot the one who probably fits the bill the most: Hoshiguma Yuugi, considering what her ability is, it felt like a wasted chance to once and for all have her ability properly expanded in this game (if not, just to give us a proper demonstration).

I know, but at the end Sumireko goes kamikaze and tries to completley destroy the barrier. There's also a huge difference between something passing casually through the barrier and someone purposedly breaking it to enter or exit, and most of the time is just random things or spirited-away humans that slip through, not youkai and the goddamn Hakurei shrine maiden going outside to have an aerial battle in the middle of a city.

That's why Reimu shows up to stop her.
The Hakurei shrine maiden's main job is to protect the Hakurei Border and by extension the Border of Gensoukyo. Yukari's main job and by extension Ran's is to fix the border when tears happen. The game shows that objects that belong to Gensoukyo will return to Gensoukyo and objects that still have a prominent place in the outside world will try to go back to the outside. Animals roam freely between the the borders of Gensoukyo since they have a place in both. Humans and Youkai are the only ones directly affected by the laws of Gensoukyo , Sumireko was even "offered" a place in Gensoukyo since she fits the criteria for a being of Gensoukyo. It was decided against due to it being cruel to her parents. The main question now is how did the outside world take this.

Damn, this means we'll probably never hear about her again. Too bad, because i liked her a lot.

Not necessarily as she does have an interest in Gensouko and her soul inhabits Gensoukyo but her body is in the outside world. She visits Gensoukyo through her dreams.

But what if the animal goes into the wrong places, like the summit of the outside world Yatsugatake, even though Youkai mountain isn't "there" anymore?

Animals may enter and exit through the borders of Gensoukyo. The borders themselves are vague and are not clearly defined and so would perhaps enter and leave at the base of the mountain. Animals may have a place in both but do not exist in both at the same time.
So it's official, Renko and Maribel are from touhou's future. Ooh boy, this is gonna stir up a ton of trouble. (and would this mean they're seeing/visiting gensokyo's past?)
Renko, That’s Your “Mother” or “grand mother” or “sister” or... something, I guess?... the point is, she’s related to you.
Simplest way to put it would be "ancestor" since we have no idea how far in the future Renko and Merry are compared to current Gensokyo events. Technically I don't think it's even officially stated they're directly related, but it seems pretty likely.

Soo, this is kinda like a case that even both Sumi and Renko have the same last names aren’t actually in fact from the same family at all..?

It could be that, sure. To my knowledge there hasn't been anything that outright says they're related, but I'm positive they are, given all the similarities between the two. Zun just likes to make things vague.
