I'm not sure about the pickled plum in the gag ball, but the beans over the ice in the bottle is supposed to be an anticipation torture device. Over time the ice melts and since Kasen is blindfolded, she can't see how much ice is left. This constitutes a psychological/physical torture device because she won't know if the next thing to drop on her head is drop of water from the melting ice or a bean. She is assumed to be an oni in this case so beans would hurt.
I think this is a reference to Japanese Setsubun custom of throwing beans to chase out Oni's (and bringing good fortune). http://en.wikipedia.org/wiki/Setsubun
As for the Pickeled Plums, also known as Umeboshi, they're used to help people sober up after drinking too much Alcohol. They have the opposite effect on Oni, which causes them to get really drunk.
So in this case, Kaisen is forced to get drunk and wait until she gets pelted by beans.
