My own memory may be fading but as Far as I remember the only pokemon specifically cited as being good to eat (excluding those that produce something edible but are not cites as being edible in and of themseves, like Trophius, Snover, Miltank and Combee/Vespequeen) is Farfeched. Presumably many more are but no others are specifcally cites. The Pokemon world does not seem to have any non-pokemon animals, so presumably all the beef comes from Taroses, all the pork from swinubs/piloswine/mamoswine (spoinks look a little too small for meat production and gruntpigs a bit too humanoid). Not to mention crabby's kinglers, corphishes,crawdaunts etc. Even WHailmers and Whalords might be on the menu(hey, this is Japan remember)though something tells me their baloon like nature meats there ain't a lot inside them.

Most but not all. I'd imagine that pretty much all pure Rock and Steel type pokemon are inedible (though a Skarmory might be useful to have around at mealtimes, it's feathers probably make good knives. Ghost types too (there really wound be anything there) which probably let's out Unknowns (though if they did have a taste I would describe it as indefinable). I also would not be all that crazy about eating any poison type pokemon (though once again this is Japan the land of fugu)
As a funny aside I've often wondered if up in the mountais there are people who milk Mareep as well as Miltank (there are people in out world who use sheep milk, so why not) actually I can imagine James (whith his ritzy upbringing) having a real taste for aged Marepino Johtoso.
Magikarp normaly evolves by level but when you make it hold cookingwares then use a fire stone Magikarp evolves into Magifilet o karp!
Pokedex entry: A Magikarp that has soft scales and more meet on its bones. Once one of these Magikarps are caught it's instantly killed because of it's usless nature, turning it into Magifilet o Karp a tasty dinner. Now people wonder if the same can be done to Feebass, a slightly less usless Pokemon.
Slowpoke tails are also supposed to be quite tasty, team rocket tried to chop off all the slowpoke tails in the slowpoke well in Gold/Silver to sell on the black market
the idea of eating pokemon is slightly off puting untill I realized that pokemon pretty much act as deities as well and all of a sudden you realize you have god/gods captured in tiny little balls pretty much for the sole reason that even with all their deific might they are still pokemon thus allowing capture
