Which is what gets me: she doesn't even have an official look and I've seen a few other interpretations of the character. What makes this green-hair-and-bodysuit look so popular? It's the most consistent design I've seen, but it's still not canon as far as I'm aware.

Probably for the same reason people say that their dogs start to look like them after a while. Taking her personality, voice and NEXT design into account this is an idealized, but not-unreasonable assumption of what she might look like.
Besides, it's a popular subversion nowadays to have the petite (or at least less masculine) character showing up in the big robot.
I read somewhere that the makers of the game took a look at the fanarts and said that this design is pretty much what they have in mind too. So that's probably why.
